Yakitori
Chicken on a stick
Original recipe from Just One Cookbook (Yakitori Recipe 焼き鳥 • Just One Cookbook)

Ingredients
For the Sauce:
- 1/2 cup soy sauce
- 1/2 cup mirin
- 1/4 cup sake
- 1/4 cup water
- 2 tsp brown sugar
For the Skewers:
- green onions
- 1 lb boneless chicken thighs
- 15g baking powder
- salt
- pepper
Instructions
- Separate green onion into white and green parts. Reserve white parts for skewer and green parts for the sauce. Cut parts into 1 inch pieces.
- Add all sauce ingredients to saucepan (including green parts of onion).
- Bring it to a boil. After boiling, reduce heat and simmer for 30 mins.
- Meanwhile, cut chicken thighs into 1 inch pieces. Put the pieces in a bowl or Ziploc bag with salt, pepper, and baking powder and mix it up.
- Assemble chicken onto skewers, alternating with white pieces of green onion.
- Spray or brush the assembled skewers with cooking oil.
- Broil, pan-fry, or grill the skewers, brushing with sauce every few minutes.
